It was love at first sight with Hamaree Rasoi Deepa's Mango bread.(Originally created by INJI ).
I got a little too excited that I added colors and made colorful cupcakes also out of it.. :P
Copy pasting the recipe as it is! I followed the exact recipe and the output was so ambrosial!
1. 2 cups and 2 tablespoon of sooji
2. 2 teaspoon baking powder
3. 1 cup sugar
4. 2 teaspoon cardamom powder
5. 2 teaspoon nutmeg powder
6. pinch of salt
7. 3 tablespoon rice flour
Mix dry ingredients together until well-blended. Then add:
1. 2 cups and 2 tablespoon mango pulp
2. 1 egg
3. 1 tablespoon lemon juice
4. 1/2 cup oil
Preheat over to 375.
Grease the pan with butter or non stick spray, pour the batter and sprinkle almonds or sesame seeds or any topping of your choice. Bake it for about half hour or until an inserted toothpick comes out clean!
