Couscous salad

* These are recipes which my baby loves and snacks on. Every baby is different. Offer single-ingredient foods at first, and wait three to five days between each new food. Always check your baby for any reaction to a particular food.
 

Ok babies,
We moms understand that rice can be boring!!!
Couscous is the perfect substitute. Couscous is a grain product made from semolina. Its texture and taste makes it a real wonderful treat for kids.
I buy these from Trader joe's. Its Israeli couscous.





1 cup couscous
1 1/2 cups chicken broth or water (I prefer broth.. it gives an amazing flavor)
1/2 onion
1 cup cooked Black bean or any beans
1/2 cup green peas
1 tomato
1 TBS butter
2 TBS lemon juice
cilantro or curry leaves
Herb seasoning or any Italian seasoning.

Bring chicken broth to a boil.
Add couscous and wait until the broth is fully absorbed.
Turn off the heat and let it stand for a while.
Then fluff the couscous well to break up any chunks.
In a pan, melt the butter, saute onions, tomatoes and black beans.
Add the seasoning, cilantro and lemon juice.
Add couscous to the pan and mix well.






You can use any vegetables that you want with this recipe.

Simple and savory meal right?
