Palak Kadhi





My son loves yogurt in any form.. fruit flavored or yogurt with rice/roti, and i want him to continue that way. But isn't repetition boring? To be honest, the reason i make food in smaller quantities is because i get bored of it the next day! My policy is 'No dish repetition during week days' ! Like Mom, like son! He wants new color, new texture and new looks everyday.. be it food or toys! Luckily he hasn't started to talk much yet. I wonder when he will ask for a new mom.. Sigh!!
So I had to come up with new yogurt recipes. That is when Aipi posted her delicious 'Palak kadhi.

Ingredients:
2 cups       chopped spinach
2 cups       Yogurt 
1 1/2 cups water
2 tbsp        Besan
1 tbsp        Oil
2 pods       Garlic chopped
1 small      Onion
1/2 tsp      Turmeric powder
1/2 tsp      Red chilli powder
Asafoetida,Cumin, Mustard and Fenugreek seeds, salt ..to taste

1. In a bowl mix water, yogurt and whisk to combine, add besan and mix till no lumps, set aside.
2. Heat oil in a non stick pan on medium heat, add the hing, cumin, mustard and fenugreek seeds, let them splutter. Add the broken whole red chilli and stir for 30 sec.
3. Add in the chopped garlic, onion and salt and turmeric, cook for 3-4 minutes or until the onion softens.
4. Add the red chilli powder and chopped spinach and cook for 2- 3 minutes.
5. Add the yogurt mixture and while stirring bring to a boil. Add water and cover. Lower the heat and cook for 10-12 minutes till the kadhi thickens to the desired consistency.




I served my son rice and kadhi and he loved it.  A healthy lunch with spinach and yogurt. After he was done with his hearty meal, I added the tampering.
1 tbsp oil
1/2 tsp Red chilli powdr
1/2 tsp Cumin seeds
Heat the oil, add cumin, when it splutters add the red chilli powder and take off the flame.
